Chipotle Maple Roast Chicken is a savory and slightly spicy dish that features a whole roast chicken marinated in a blend of Blake Hill Chipotle and Maple Jam. Preparation
3 - 4 lb chicken (giblets removed), preferably organic
Blake Hill’s Chipotle & Maple Spicy Chili Jam
Salt, to taste
2 Tbsp olive oil
1. Preheat oven to 400°F
2. Place 2 Tbsp Blake Hill’s Chipotle & Maple Chili Jam inside the cavity of your chicken then place in a roasting pan
3. Pour olive oil into a bowl and mix with 2 Tbsp Chipotle & Maple Jam. Using approximately half the liquid - baste the chicken, including pouring some of the liquid in the hard-to-reach joints of the chicken
4. Cover chicken loosely with aluminum foil and roast for 30 minutes. Remove the foil and roast for another 30 minutes, then baste again with remaining liquid and roast a final 20-30 minutes until chicken is thoroughly cooked and the internal temperature reads at least 165°F
5. Remove chicken from the oven, let it rest for 10 minutes, slice, serve and Enjoy!
