Pickled Spicy Beets
If you are in the mood for tart and tangy, try Joycie’s Spicy Beets. Not your grandma”s beets for sure, these sweet beets are grown in the foothills of the Wichita Mountains, boiled in small batches and jarred in a sauce of white vinegar, sugar and jalapeno peppers. They’re sweet, spicy and ready to eat.
Serve these on the side with sandwiches, toss them into salads, set them out as part of an antipasto spread, or take a jar on a picnic. Mound a few beets in the center of a salad or toss with steamed vegetables for a nice splash of color and a tasty hit of heat.
